Dinner easy – ground turkey pasta recipe

We all try to eat healthier these days.  Karyl at Karyl’s Kulinary krusade came up with this yummy ground turkey pasta recipe.  Fettucini with ground turkey and vegetables is a great way to eat healthier, cleaner and most of all deliciously!  The key to healthier eating is to come up with ways to do that and still bring tasty dishes to the table.  This one is a sure fire way to get your family to eat healthy with every flavorful bite!

Ingredients

8 ounces lean ground turkey (I use 93/7)
4 ounces fettucini
1/2 cup each red, yellow and green bell pepper, diced
1/2 cup yellow onion, diced
2 garlic cloves, minced
12 grape or cherry tomatoes, halved
4 ounces baby portobello mushrooms, sliced
Salt & pepper
2 tsp olive oil
1/4 cup vegetable broth (I use homemade)
2 Tbsp sweet chili sauce
1 cup baby spinach or 2 baby bok choy (optional)
Instructions

Cook fettucini, in pot of salted boiling water, for 18-20 minutes
If using bok choy, remove bottom core (inedible), chop into bite-sized pieces, and rinse thoroughly
Preheat oven to 450
Season tomatoes with salt & pepper, and drizzle with olive oil
Place tomatoes on baking sheet, and roast in oven for 20 minutes. Allow to cool
In large skillet over medium heat, cook ground turkey until cooked through. Remove and set aside
Add 1-2 teaspoons olive oil to skillet, and turn heat to medium high
Add bell peppers and onion, and saute for 5, until onions are soft and peppers are tender-crisp
Add garlic, and cook for 1 minute
If using bok choy, add at this time and cook for 5 minutes
Add mushrooms, sweet chili sauce and broth (plus spinach, if using), and cook until broth is absorbed and spinach has wilted
Add tomatoes and pasta
Portion into serving dishes
